Hey here is the general rule
Same polarity same wind direction .... in phase .. this is how most old strats were wired
Same polarity different wind direction .... out of phase
Different polarity different wind direction .. one is RWRP....In phase and hum cancelling
Different polarity same wind direction ... out of phase.
Some like the distinct out of phase sound and specifically wire for this.
You can easily tell polarity with a compass :D

Absent a compass you can simply place the pickups in proximity with one another, with the poles positioned top-to-top. If they repel, they have the same polarity. If they attract, one of them is reversed.

I do. For clean sounds I think it delivers a notably stronger sound in positions 2&4. Years ago I read that Knopfler preferred it. So ordered some Bare Knuckles Sultans. This was in the days where you could ring BK up, specify what you wanted and get it for the same price as their off the shelf pickups.
Never looked back since. I think the hum cancelling effect of rwrp pickups is of very limited benefit. Live, a decent rig without coils of cable and regulated power does way more to prevent unnecessary hum. A bit of hum is never a problem unless you're on some sales centre opening gig for Mercedes or something else really spiffy.
Never heard anyone complain that Blackmore or Fast Eddie were suffering hum from their rigs. They both used same polarity, same wind singlecoils in the 70's. Two years beforehand people were revelling in the noise Hendrix made. All that spitting and popping as he smashed his guitars up
