Is there any advantage to hooking up the GT100 to the PA through the headphone out port vs the XLR outs? I know the XLR are the traditional way I just wondering some amps, like the orange crushs, have a direct headphone out that is a simulation of what the amp would sound like playing through a 4x12 cab. any info on this?

Try recording something you play a lot, with Audacity, by usb,
headphone, and xlr, including several seconds of 'noise floor',
for each output, hands off strings, just amp hummm.
You can compare the three sets of waveforms visually and by ear.
You can use plugins in Audacity, it's own, or ones you install,
to test eq and filters on the tone and silence, draw your own informed
conclusions, and transpose the knowledge to your amp settings.

I like using the headphone out, just for the master volume.
It was slightly noisier than the usb signal, so for extremely
clean recordings, I'd use the usb when possible. For live setups,
crowd noise and attentiveness levels will negate a little line noise every time.
Cheers
