I notice on a few websites it states the GT40 has 2 celestion speakers. I was just watching some official fender videos and they do say the 100 and 200 have celestion speakers and then say the GT40 has two speakers but does not say celestion.
This is in the following video at 1.19.

Can anyone confirm what they are as I can't find any teardown videos.

The speakers in Mustang Amps are made by Celestion to Fender specs - hence 'special design'. They are not available off the shelf and are not similar to any Celestion-branded models. Their frequency response is wider than normal guitar speakers, if not completely 'full range' in hi-fi terms. The speaker voicing is done in firmware. If you substitute another speaker, it would not match the firmware speaker voicing and certainly wouldn't work across the wide range of amps/cabs that the Mustang GTs can emulate.

I'm quite sure the GT40 speakers are not celestion. Trust me, when fender or any manufacturer uses a celestion in one of thier amps they make sure to shout it to the world because they are considered the primer guitar speaker manufacturer. Notice the rep in that video did not say the 40's are celestion. What manufacturers usually do in the case of a speaker this size is choose a stock model from the catalog of whatever generic speaker manufacturer has the closest model to what they are looking for. But yes, as in the above post the speakers in the 100 and 200 are almost a full range speaker, and no doubt the 40 is also just that. I've come to prefer the way the my GT100 feels and sounds with the speaker from my old MIII in it. But it's 8 ohm and the amp wants 4 so i'm going to get a 4 ohm version of it, that is, assuming my first band outing with it confirms i prefer it at stage volume too. (the G12T-100 is now called the "hot 100" in the celestion catalog, said to be the exact same speaker according to a rep i asked)
