Am I correcting in thinking that the Mustang GT-200 is actually 2x100 watts, ie 100 watts into each stereo channel? That's not going to be significantly louder than a GT-100. I don't see the point of having stereo when the two speakers have no separation.

Your right about the amp having 2 100 watt sections but with the larger cab and extra speaker you will move more air for a bigger sound.

But 200 watts into a pair of speakers in mono would be even better as the two speakers would be locked in phase.

Some solid state amps make good use out of stereo, like the Roland JC120/JC90/JC40 amps, where you can adjust one of the speakers to anything from 100% wet to 100% dry. Having wet and dry come from different speakers makes a big difference to the sound.
And being analog, they're also louder to start with than digital modeling amps which shape the waveform by subtracting from it.

If going for the ultimate in loudness, modeling, solid state and wifi connectivity at the same time, a "600W" Kemper profiler power head and a wifi bridge is probably hard to beat. But then you're in tube amp pricing territory at over $2000 plus a cab.
A Line6 M9 modeling pedal into a good Randall or Peavey SS amp would be less than a grand, and just as loud, but no WiFi.
