First I have a amp question

Can I use a super champ x2 head with a super sonic 60 2X12 cab?

and second, I look forward to spending some time with you guys! thanks for you time :D

Welcome to the forum 6 String Wizardry!

The Super-Champ X2 whether head or combo version is a 15 watt output 8 Ohm minimum amp. The Super-Sonic 60 2x12 cab is a 60 watt capacity 8 Ohm cab. So technically it will work.

The head will look like a midget on a mountain though since that is an old school style full sized cab.

If your Super-Champ X2 is the combo version you can not use both the internal speaker and the external cab at the same time. The Super-Champ's 8 Ohm output eliminates the possibility of using more than one 8 Ohm cab. The total load can not be below 8 Ohms on this amp, which is sort of interesting since usually a minimum 4 ohm load is tolerated on guitar amps.

with the super champ head would I be able to use both speakers with a 212 like the super sonic 60? or can I only use one speaker?

It depends on the cab's OHM RATING. With that head you MUST have an 8 Ohm load. The cab you asked about is the Super-Sonic 60 2x12 and this cab has an 8 Ohm cab. You would just plug into the cab as it comes stock. You'd use both speakers.
