Hello!
I'd love to get the '' Fender custom shop artisan okoume strat'' but the thing is that it has a roasted Birdseye maple fretboard so I don't know if I should clean it like a rosewood fretboard with lemon oil or like a maple one, please help! :?

Welcome to the Forum Adam. I usually just wipe the fret-board with a soft cloth after playing.

I'm sure the Fender Custom Shop crew would give you an official answer. Gibson's customer service recommends the "rosewood-like" care & cleaning method.
But: roasted/baked/thermotreated(/…) wood is still relatively new in guitar construction, so only time will tell.

I'd go on the 'as little as needed' principle. Dry cloth wiping to Zippo fluid if needed on cleaning, the smallest amount of oiling if the fretboard absolutely needs it.

This.
If the finish seals the grain like it does on a standard maple neck, then this will not be needed, but also will do no harm. If the finish is open, like Rosewood, then this is something that is needed from time to time to keep the wood from drying out, so it's a matter of "It may not be needed but it won't hurt"

The most common thing done to any guitar that causes harm is over-application of oil to the neck.
They do not need to be soaked, and they do not need application every time the strings are changed.
Once a year... twice in a dry climate... is more than adequate.

I overdid it on an Epiphone Les Paul and the inlays started popping out

Good you pointed out the 'finished fretboard' option. I took for granted that the roasted fretboard is bare, because that's the most common option with thermally treated fretboards.
But if there's lacquer (the neck itself is nitro finished), no oiling is needed.
