Can the Mustang I headphone jack be adapted to use bluetooth headphones?

The headphone jack itself can't be modified to do Bluetooth - it's just an analogue audio output socket.

What you can do is connect a Bluetooth transmitter. This is a device that takes (stereo) analogue wired audio input (ie it has a cable that you plug into your headphone socket) and turns it into wireless audio to send to your headphones. These devices seem quite cheap and widely available, I have never tried one so cannot comment on their quality or reliability.
