Is there away to activate the 'speed' and 'depth' chicken heads on the model, without
putting up a stompbox? If not, thats ok, just want to make sure I'm not missing something right in front of me.

As soon as you turn those knobs, vintage trem pedal pops up in front of the amp. IMO they decided to show the stompbox because vintage trem occupies the modulation slot.
