The main difference between the mustang I v1 and Mustang ! v2 is the same as for all of the v2 mustangs -- 5 additional amps and some additional effects.

There are some hardware changes between the Fender® Mustang™ (V.1) and Fender® Mustang™ (V.2), for example; the Mustang III/V (V.2) have XLR balanced outputs.
