I'm a mad scientist of sorts when it comes to musical equipment... I have numerous amps scattered around my spare bedroom studio & most are gutted, covers off, in various states of repair or experimentation... I've made 3 small speaker cabs out of old combo amps I no longer used. 2 have vintage 12" speakers in em (old 60's amps) & 1 has a 10" celestion. I removed the controls, sealed the openings - painted them up a bit & they actually look & sound pretty good.

My new Mustang i V2 is a great candidate for my next idea ;)

I'm thinking of making a cable with a 1/8" mini jack on the end and plugging it into the headphone output on my 'stang... Usually I'd just remove the back off the amp & jumper into the existing speaker (or speakers) but I want this to look nice. Would this work & power a 12" cab (I know the volume may suffer a bit...)? Wouldn't hurt anything would it?

You probably won't break anything by doing this, but it won't sound good - if you get any sound at all.

A headphone socket (whether on the Mustang amp or anything else) provides low voltage/current/power. One volt and a few tens of milliamps for example.

A loudspeaker needs more power to drive it. Several volts (or tens of volts) and hundreds of milliamps (if not several amps) are typical.

So in short, your headphone socket won't provide a big enough voltage, and won't be able to supply enough current, to drive a loudspeaker.

What you could do is use the headphone output as the input to a stand-alone power amp, that you then use to drive the loudspeaker. A simple diy amp kit would suffice, if you enjoy tinkering.

Stop while you are ahead. Stop tinkering and just play before you destroy your amp!

hehe - maybe you're right... it's hard being a Mad Scientist especially when I know ziltch about electronics... almost killed myself a few years ago with an old tube amp. I was an electrician for almost 30 years but that's different.
