I"d start with the 65 Twin amp model, remove any effects, and EQ to taste. You'll probably want to add a little reverb.

Go mess with Fuse, and try either the '57 or '65 Deluxe models. I uploaded a preset called "Jazz Deluxe" and that you might like. There are also several other presets on Fuse (Jazz Box and Jazz Champ are good ones as well).

I like either Deluxe model with the treble turned down, bass and mids up and a bit of delay. On the neck pickup of a Les Paul, they sound great.
