Forgive my ignorance here. Ive been searching and have yet to find the answer (or I overlooked it somewhere). Is there documentation that shows what each of the cab simulations are...differences etc.?

Not yet. Of course many of the cabinet models are implied in the name, others are not so easy to figure out, unless you have owned one of the amps that served as the speaker model.

for example, the Champ is a small single speaker cabinet in the low power Champ combo amp. The twin 2-12 (or is it 2x12) is, I think, a closed back 2 x 12" cabinet (others may correct me on whether the back is open or closed) used in the Fender Twin Reverb amp The Bassman is eigher a 12 or a 15 inch bass cabinet. Then there are three different 4x12 cabs, with a C, G, or V connected to them. I am not sure what the different models are, some are Marshalol cabinets. (A little help from other posters?) The SS2-12 is a 2 x 12" cabinet from a Fender Supersonic amp. There are others, including "No Cabinet." I don't remember the rest, I am going from memory here.

I hope this is a good start. I hope others will add to and correct this list.

I think '59 bassman cab should be 4x10"
