Apologies for what might seem like a stupid question but I've just bought a Mustang 1 V.2 and I'd like to know if it's ok to leave it plugged in all the time (obviously I turn the power off on the amp itself) or if this will damage something in the electronics. I'm only asking because my last amp was a little Peavey Rage which developed a permanent buzz after being left plugged in for a month.

It is perfectly fine to leave an amp (any amp) plugged in after you shut it off. If you're worried, get a 'surge protector' plug and shut both off. I have all my amps plugged into surge protector strips mostly for convenience.

Whatever problem your Peavey eventually developed was not that it was left plugged in when turned off...unless lightning hit your home---and a surge protector would eliminate that cause.
