What kind of xlr cable do I need when I want to connect my Fender Mustang 3 to a PA? Is it better to use a stereo xlr cable?

Eh?.. it's two separate outputs - no such thing as a stereo xlr afaik - they are sheathed pairs.
Unless you mean there's a bonded pair of cables? It makes no difference.

If what you are using for your PA requires 1/4" TS inputs (somewhat rare these days), XLR to 1/4" TS cables do exist.

If you want to bundle your cable run, use zip ties or wire flex loom to keep things neat.
