I smoked brisket, ribs, chicken and turkey for a friends party this weekend. The turkey was gone before I could finish slicing it. It has won first place in every contest we have entered it in. I thought I would share the VERY simple recipe. The other meats were just as good I think.


Soak the turkey in buttermilk for at least 8 hours nore more that 12 hours.
mix together one container of McCormicks Salad Supreme with an equal amount of lemon pepper and rub it on the turkey after you have removed it from the butter milk and patted it dry. Place on the smoker with any wood but mesquite, When the internal temperature reaches 175 degrees pull it out and let it rest loosly covered for 20 minutes.

flamecaster if you grill mushrooms use portobellos you can apply any of the marinades mentioned above if you use a season rub be sure to lightly oil it first can be eaten like a steak or as a burger .tree oysters are also good with alittle olive oil garlic s&p good with chicken or veal chops

We use our grill at least 3 times a week. Steak, lobster, shrimp, chicken, ribs, and burgers. I have seen some good suggestions that I'll have to try out.

I made coffe and uncle ben's rice on a campfire once. We lost power after a mega tornado ripped though a neighboring town (parkersburg IA) so I set up the grill and used it all day.

Oldpat,

That bird recipe looks like a winner. I may have to try it. Way to go on getting in those BBQ comeptitions. That's pretty cool. I've been using the BRITU recipe with excellent results.

We have a bunch of good chefs around here. We need to put together a cookbook. :D

We've been making our own rubs, marinades and sauces for 15 years now I'm always open for new ideas and recipes a cookbook would be very good idea.

Does anyone have any homemade BBQ sauce recipies they would mind sharing? I found a few online that I will try, but can't stop without getting some more good ideas. It would be much appreciated.

I'd like to invite EVERYONE down here to Memphis, TN next May. This is where the World Championship BBQ Contest is held annually. "Blues, Booze, & BBQ" is the unofficial city logo. There where 150 teams from around the world last year. HEY, if Fender Musical Instruments wants to field a team, I'll volunteer as the OFICIAL city tour guide. Besides, wouldn't you just LOVE to tour the Gibson plant here???? I HEAR it's really cuul (I never have seen the thing & only been to Graceland once since it's been open to the public).
