Currently I only have an orange micro terror and matching cab as I don't play live. Thinking of hooking up with my old band after we drifted apart when life started happening in earnest.

Interested in building a bigger cab for the head, but don't know where to start speaker wise. Any suggestion for speaker type, size, and how many to use?

Part of this is a money saving exercise, hopefully, so looking for that holy trinity - value, sound and ball tingling capability.

I find Weber Signature series speakers to be amazing for small watt amps. The value of their alnico speakers is truly a gift to guitar players. The EC Champ uses a signature series 8" speaker. 43.00 dollars for the alnico version. Going up to a 12" will get a bigger sound.

Make sure you match the impedance.
And keep in mind that the Micro Terror isn't an awfully strong amp - you may not want to pull 12"s with it, because that break-up may be far from pleasant, with the output stage of the Micro Terror being solid state and all.

I weighed building my own cabinet against ordering one from the many vendors on ebay and decided it wasn't worth my time. I don't know how some of them can build so cheap, and if you pay attention to the details you can get a pretty nice quality cabinet. I ordered the one on the left in the picture and installed a Celestion Greenback speaker that I bought from AMS.
