A lot of time it's either just tone (mostly) or their kind of note choices. Which is mostly subjective. Or in some cases both.

Guitarists that guitarists love but I hate to listen to?

Jimmy Page (Probably the worst)
Stevie Ray Vaughan (Too harsh)
Bonamassa (except his Tele work which is few and far between)
Clapton (hate might be a strong word. I find him pretty "meh" for the most part. Though I dislike his early work)
Eddie Van Halen
Richie Sambora
Malmsteem

Categorically most shredders. Malmsteen in particular.
Not too fond of Beck, either.
I really prefer the simplicity and good tone of someone like Warren Haynes.

Not fond of shredders in general (although I like a few individual songs by Satch and Vai)...

I like a few individual songs by Eric Johnson, but overall, meh.
