Although 7's do seem a bit extreme, we have a Fabulous Forumite who has a severe medical condition with his hands that requires he use a very light string gauge...I believe he uses 7's or perhaps 8's.

Oh wow that's great, I hadn't considered that application. Seriously though, whatever works for you is what you should use. I tried 7's very early on and found that high 'e' string so hair-thin that I was constantly breaking it. I've gone to the other extreme too - for a while I was using 11's with a wound 3rd (g) string. The tuning stability was awesome.

What do .007" gauge users select?

A different instrument that doesn't hurt their widdle hands when they bend a stwing.

Billy Gibbons uses .007s (and super-lightweight guitars), but I wouldn't presume to tell him to switch to a different instrument that doesn't hurt his widdle hands.

I use different string gauges on different instruments. When I play something that requires a full note bend on the second fret, big pinkie bends, or flamenco strikes, thinner strings come in handy. But when I want stiffer strings for stronger attack, better tuning stability or to avoid sharping, I have that too.
Currently, I have every gauge between .008 and .012, but wouldn't mind going to .007 or .013 either.

That's cool. He's definitely in the minority with that choice.

I use those in a 9 gauge...great, long-lasting, toneful strings...

I've been using 11s on both my teles the past few years, but I've started using skinnier gauges more recently, both have Ernie Ball skinny top/heavy bottoms at the moment. I think I have 11s on my acoustic at the moment.

Mainly 10s. Ernie Ball Regular Slinkies, 10-46. As soon as the first string on my Gibson LP breaks (and before recording which we'll do in a month's time), I am putting 11s on the Gibson. The 10s on Gibsons feel like 9s on Fender and I am now used to 10s on the strat.. So putting 11s on the LP shouldn't feel too much different as far as tension goes, compared to the strat :)

Bought several different 11s, all from Ernie Ball, gotta test out which ones work the best for me :)

I use 9's on my Strats, 10s on my Jag and 9.5s on my PRS Santana SE.

The shorter the scale the heavier the strings.
