A lot of what to get depends on the output impedance of the headphone amp. Phones well matched to the output impedance will sound better and louder than a mismatch.

Buyers simply need to be aware that anything up to 80ohms is going to be more plug n play friendly, and anything over will need a dedicated amp to deliver its potential.

'impedance matching' suggests there's a more complicated process to follow imo.

I have a pair of Audio-Technica ATH-M40fs that I like for tracking. They're fine for my needs but if you like a deep bass these aren't the best.
