I've just bought a Rickenbacker 360 six string. I didn't want the 12 string version as I wanted a guitar that I could use for an entire gig and not for specific songs only.

I want to get an octave pedal that can get as close to the classic 12 string Rickenbacker sound. I used to have a micro Pog but didn't like it as it sound more like a synth than another set of strings. Any suggestions for another pedal to make my Rick 360 six string sound like a 12 string?

I can seriously recommend the Boss OC-3 SuperOctave.
I really love it and it can octave chords(!) as well.
You have two octaves which can be adjusted to your needs. You can choose different modes and you can set separate volumes for both octaves.

Additionally it works as an overdrive if you wish to use it that way but that part of the pedal didn't convince me.

I bought it as an octaver, use that setting only and I'm fully satisfied with it for that part.
