There is a chance my 3+ year project of building a Cobra replica will be done, but I'm not sure I want to venture out into the vast open roads of the west in something I built with my own two hands... at least not until it has a couple years of debugging under its tires.

Good plan! You will enjoy it. For me twice in 66 and 68, then again in 79 when the conversion was happening. Huge difference, faster, and if you plan it out, a cool road trip still. If I recall there were more roadside attractions on old route 66. 8)
