Sticky Toffee Pudding
(Preheat oven to 400 degrees)
In a mixer, beat until smooth:
2 oz. butter
3 T. firmly packed dark brown sugar
Then add:
2 eggs one at a time, and
1 c. flour

In a medium sauce pan over high heat bring to a boil:
6 oz. pitted dates
1 1/4 c. water
2 oz. brandy

Puree date mixture in a blender with 3/4 t. baking soda

Add to flour mixture until just combined

Grease & flour five 8 oz. baking cups

Bake at 400 for 20-25 minutes or until a knife comes out cleanly.
(They will fall slightly even after thoroughly cooked)

Toffee sauce:
1 c. cream
4 oz. butter
1/2 c. packed dark brown sugar
2 T. dark Karo syrup

Boil for 2-3 minutes until slightly thick
Sprinkle with toasted salted pecans and serve.
