Wow toughy.

I'd say:

Black Sabbath - Planet Caravan
ACDC - Soul Stripper (first solo)
The Doors - LA Woman
Led Zeppelin - All of them, but especially The Rover / The Lemon Song (atm)

Any solos from Mike Campbell of Tom Petty & The Heartbreakers are good!

A long list of Steely Dan solos by Walter Becker ("Black Friday"), Mark Knopfler ("Time Out Of Mind"), Elliot Randall ("Reeling In The Years"), Jay Graydon ("Peg") and especially the inimitable Larry Carlton ("Kid Charlemange," "Don't Take Me Alive," and "Third World Man"). The Dan demanded impeccable tone, taste and musicality, and they got it every time.

I'm always moved by David Gilmour's solo on Pink Floyd's "Sorrow" from Delicate Sound of Thunder or Pulse.

Andy Summers in 'So Lonely'.
Perfect, not too elaborate and of coarse a fantastic melody.

Hmm there are lots. One that comes to mind right now (prolly because I am listening to it) is Kissing the Shadows by Children of Bodom
