What is a good muddy set of humbuckers? Something bluesy!

Traditional. If you want single coil size, DiMarzio's BC-2 in the bridge and Tone Zone S in the neck will do the job quite nicely.

Personally, I think if you're gonna do it, do it right. Get a new pickguard and go full-sized humbucker.

A Dimarzio Tone Zone in the neck is like a wrecking ball. Then I would say either a Super Distortion or Gibson 498t in the bridge. The Gibson is more bluesy.

Single coil sized? I dunno.. Only ones I've ever had and liked are the SD lil' 59 bridge and JB jr. neck. Pretty good setup as well. I have no experience with DiMarzio single sized hums, so I can't really comment on them. I have a SD cool rail around here, but not really worth mentioning as a suggestion. It just sounds muddy and flat to me.

bare knuckle has a lot of options and i have heard lots of good things about them. might be an option, they are pricey but good from what i hear.

Please forgive my total ignorance on electronics. What would be the difference in using a "250k" pot as opposed to a "500k" pot. What do the different size capicitors change about sound etc? I see various parts offered but not only don't know what to pick or why pick one oer the other.

Because the pickups you are contemplating are high output, a higher pot resistance is required to pass along more of the pickups' inherent frequencies. In layman's terms and in your particular situation, a 250K pot will ramp up the midrange at the expense of the other frequencies, causing the pickups to sound fizzy and flat.

Again, in your particular situation, a capacitor bleeds off high end. The stronger (higher number) the capacitor rating, the more high end it will bleed off. Typical parameters for your (contemplated) pickups are anywhere from .022uf to .050uf. As these pickups will be quite bassy to begin with, a .022uf one would be quite adequate.
