I've been playing guitar for over 40 years. Acoustic or electric, set neck or bolt on, I have always changed my strings all at once so I can clean the guitar with the strings off. I have never once experienced any neck related issues from restringing this way. I have never once experienced any issues at all of any kind from restringing this way. It's an old wives' tale. Don't worry, it won't be the last. There are lots of those around and you may even run into some of them by hanging around here as well.

Tuning up a floating trem will take a while doing them all at once and I am almost certain that is why the one-at-a-time practice originally got started. I expect the neck stories where invented to justify the method.

I usually take all the strings off at once. It gives me a chance to really wipe down the fretboard... and it only takes me a couple of minutes to replace strings, so I don't think It'll mess with the neck.

I like one string at a time.
Unless I am doing repairs or trod turning. Then I take them all off one at a time.
But never cut them off with a wire cutter while at tension.

All at once. It's kind of amusing to snip at least one string while it's at tension. You should have seen me the first time I changed strings  it was horrible. It took me around 20 minutes, and then another 10 or so to get my tuning straight. Now it's so easy, I can do everything in under 5 minutes on a good day.

BMW is dead on. I, too, have been playing for over 40 years and I still can't believe how many people think you have to baby a guitar when you change the strings. It just ain't so.

Well, at any rate, all at once.

I take all the strings off at once and wipe down the board. Sometimes with linseed oil other times I just wipe it with a dry cloth. It takes me about 10 minutes to string a guitar and about 5 to string a bass. I have not noticed any problems with my neck warping or anything. I will continue doing it all at once, but it is fun to cut a string while its at full tension (dont recommend that though).

Good one Mike :D

If you're doing fretboard maintenance as everyone has posted there shouldn't be an issue taking off all of the strings. Changing each string individually is the norm only because you'll probably change strings after gigs so much more often.

I have been playing since the late 1980's. I remove all the strings at once, do a good cleaning under the pick guard and neck. Put them all back on. Check my intonation and I am back in action. Usually takes me about 30 minutes to do all this.
