Saw this Christmas cake recipe on the SAHB Forum and thought some of the older members here might smile :D

CHRISTMAS CAKE RECIPE.

Ingredients:

* 2 cups flour * 1 stick butter * 1 cup of water * 1 tsp baking soda * 1 cup of sugar* 1 tsp salt * 1 cup of brown sugar * Lemon juice * 4 large eggs * Nuts * 2 bottles wine * 2 cups of dried fruit

Sample the wine to check quality. Take a large bowl, check the wine again. To be sure it is of the highest quality, pour one level cup and drink.

Repeat. Turn on the electric mixer. Beat one cup of butter in a
large fluffy bowl. Add one teaspoon of sugar. Beat again. At this point it's best to make sure the wine is still OK.

Try another cup... Just in case. Turn off the mixerer thingy.
Break 2 eggs and add to the bowl and chuck in the cup of dried fruit.

Pick the frigging fruit up off floor. Mix on the turner.. If the fried
druit gets stuck in the beaterers just pry it loose with a drewscriver.

Sample the wine to check for tonsisticity. Next, sift two cups of salt. Or something. Check the wine.

Now shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or some fink. Whatever you can find.
Greash the oven. Turn the cake tin 360 degrees and try not to fall over. Don't forget to beat off the turner. Finally, throw the bowl through the window.

Finish the wine and wipe counter with the cat.
Go to the supermarket and buy a cake.

Italian Meatballs

Ingredients

3 lbs meat
1 yellow onion
4 eggs
3 slices stale white bread - crusts removed
1/2 cup milk
1 cup breadcrumbs
1 Tbs garlic powder
2 Tbs onion powder
2 1/2 tsp salt
1 tsp fresh ground black pepper
1 cup grated Parmigiano
1/2 cup parsley


Directions

For the meat, you can use meatloaf mix (veal, beef, and pork) or ground beef. Don't go leaner than 85/15 with ground beef. You need some fat.

Dice the onion as fine as you can. Put the meat in the bottom of a bowl. Put all ingredients except the bread, milk, and pepper on top of the meat.

Soak the stale bread in the milk and put the wet slices in the bowl. Grind on black pepper. I like a generous amount and usually use more than stated.

Use your hands to combine all the ingredients. The meat should be well mixed. Unlike burgers, you want the texture to be fine, not coarse.

Roll the meat into balls. It will make about 20 good-sized meatballs.

Either fry them in a frying pan with some olive oil or put them in a roasting pan with a thin layer of olive oil at 350 for about 30 minutes. Drain them on paper towels for a minute and put them in marinara sauce and simmer them for a couple of hours. The meatballs will give the marinara a great flavor.

You can certainly eat them right away, but make sure they are cooked through. They don't need to be if you are boiling them in the sauce. I bake them, BTW. It's easier and much less messy. If I was not boiling them in the sauce I would turn them a couple of times as they cook so they get crust on all sides. It doesn't really matter when they are going to cook in the sauce.

The key ingredient in this recipie comes from my wife's Italian grandmother. It's the stale pieces of white bread soaked in milk. It just gives the mix a fantastic texture!

If you do a Ham and are tired of the same old glaze try this one:

Pineapple Coffee Glaze

1/2 Cup Dark Brown Sugar
2 Tablespoons Cornstarch
1 20oz can of Crushed Pineapple
2 Tablespoons Balsamic Vinegar
1 Tablespoon Dusseldorf Mustard (Any Mustard will work)
1 Cup Strongly Brewed Coffee

Mix all ingredients together and pour over the ham as it cooks.

This is one of the last recipes that my brother Carl and I worked on before he passed away.

This is an easy one that almost anyone can do
and our take on the twice baked potatoes that are good
alone or as a side dish :

Ingredients:

4 medium baking potatoes
1/4 cup butter, cubed
1 cup (8 ounces) sour cream
1 cup (4 ounces) shredded cheddar cheese
4 bacon strips, cooked and crumbled
3 to 4 green onions, sliced

Directions:

Bake potatoes at 400° for 1 hour or until tender. Cool slightly. Reduce heat to 350°.
Cut each potato in half lengthwise. Scoop out pulp, leaving a thin shell.
In a large bowl, mash the pulp with butter. Stir in the sour cream, cheese, bacon and onions.
Spoon or pipe into potato shells. Place on a baking sheet. Bake for 30-35 minutes or until heated through.

I'm not sure 'bout Christmas recipe, but one of my favorites, that I do when I'm at a friends house in town is the Perfect Pizza.

Pick up phone. Dial local pizzeria. Order large pizza of your choice. For extra smiles...use a coupon and get an extra pizza free. Wait by door 20-45 minutes(depending on how busy they are, and how far you live from there). Exchange cash for pizza. Enjoy!

Not for Xmas particularly but very good.
"SWEET PEANUTBUTTER"
Mix together in a bowl.
1. 1/4cup Peanut Butter
2. 1/2stick of real butter
3. 1/2cup STEENS 100% pure cane syrup
4. mix ingredients untill smooth.
5. 4 large Biscuits and a quart of ice cold milk.
6. slice one biscuit in 1/2 and spread sweet peanut butter on it.
7. pore a large glass of milk and eat untill your tummy hurts.

"PICKLED HEARING"
Nice Fresh Medium Sized Hearing
1. Thoroughly clean inside and out, no heads please.
2. Cut into 2 or three pieces,no tails or fins either.
3. Place in a large container.
4. Mix equal parts Water-white vinegar & Milk add salt to taste(use more salt than usual). combine pickling spice with liquid. I use ready made pickling spice. (Be carefull, the spices can be overwhelming if you use to much.)
5. Add enough liquid to completely cover fish. cover the container and put it in the Fridge for 7days. The combined liquid will completely cook the fish. on day 8 you may begin to enjoy your master piece. this recipe works equally well with Salmon / Trout. 8)

Some people make their own eggnog, I don't, so buy some at
your local grocery store (plain eggnog is fine, but they have many
flavors also) then decide what type you want (Liquor is optional):

Eggnog Martini
1 part Kahlua
1 part Whiskey
4 parts Eggnog

Irish Eggnog
1 Quart Eggnog
6 oz. Dark Rum
6 oz. Irish Cream
8 oz. Whipped Cream

Nashville Eggnog
3 oz. Rum
3 oz. Brandy
6 oz. Bourbon
32 oz. Eggnog

Down South Christmas
1 oz. Southern Comfort
½ oz. Creme de cacao
4 oz. eggnog

I'm impressed by Danny's "Pickled Hearing". I thought that was something Pete Townsend and Phil Collins had - no idea it was a fish dish.. :wink:

Interesting egg nog drinks, but the classic snowball seems to be missing:

One egg cup of advocaat (remember to shake the bottle first).
Half an egg cup of lime cordial.
Whisky tumbler of ice cold clear lemonade.
Mix and serve in a tall glass.

Not just a drink for the women in our lives - lovely with an Xmas day breakfast of scrambled eggs and fresh smoked salmon..

Tessa's perfect pizza recipe made me laugh.. 8)

Baked French Toast Casserole

Ingredients

1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup

Directions

Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.

The next day, preheat oven to 350 degrees F.

Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.
Praline Topping:

1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.
