I replace the strings one at a time. I find that it makes it easier to get the thing back in tune. It's also easier when you still have the plastic trem cover on the back of the guitar (getting the strings through the holes and into the block).

I've always taken them all off and then replaced them. I usually do
one guitar at a time and give it a quick cleaning and oil change. :D

+1 especially on my acoustics to lemon oil the fretboard.

I always change one string at a time to keep tension on the neck.
