Oldest one is about a year and a half old, yet they're all already getting some rust. Is there anything I can do to fix/prevent this?

First clean them up as best you can and then apply a couple of thin coats of wax.

Metal polish and maybe some fine grit polishing papers (I'm not thinking steel wool because you probably don't want little bits of steel next to inputs and switches)? Similar strategy to polishing frets is what I would try.

What parts? Nuts and bolts? If so, take them apart and clean them with some sort of chemical, then hit em with WD-40. I did that was many bikes and skateboards through early childhood.

Carefully remove the electronics and thoroughly clean everything. It might be a pain, but it'l be worth it.

Sounds like you have acid sweat - many people do. Do you go through guitar strings quickly? Are the screws and bridge on your guitar's pickguard tarnishing?

Literally, the natural oils in your perspiration could be stripping away at the metal finished parts of your pedals..
