There is a lot of work and precision put into making guitars. If the cuts are off just a little, you will have an expensive piece of wood not a usable body or neck. They are also hand made, not done by machines. So, price of the wood, the skill of making that wood into a workable guitar...the more fancy stuff you want, the more you'll pay.

Building intruments is an art not something learned in 1st year wood shop class.
