You should try hickory smoked bacon, eggs over medium, buttered grits and a biscuit with sorghum syrup on it. Dang that is fine with me!

But I would try the maple cured bacon....and as for back bacon or Canadian bacon...that is what MdDonald's puts on Egg McMuffins so I'm kind of burned out on it.

Back in the 80's on SCTV comedy show they did a bit now and then about back bacon on "The Great White North" segment using Dave Thomas and Rick Moranis as two hop head Canadians.

Hello,

A friend I used to work with from Jacksonville was telling me about maple bacon (I live in Oz) and how you can't buy maple bacon over here. Recently I bought some Canadian Maple syrup from the store and I have never had maple syrup taste that good before, it is so good I even have a teaspoon or to on its own when I run out of pancakes. I have tried cooking bacon and placing small amounts or maple syrup over the bacon when served but it seems to act like a sauce more than a marinade, my friend said you have to use the oven and spread some syrup very fine over each slice to re-create the original. Has anyone tried this before?

Dude. Get yourself down to the "Pancake Parlour" and order Canadian Pancakes. Basically Bacon and eggs (fried) on pancakes with maple syrup. Optional extras are pineapple or fried banana. Sensational. If you are in Sydney, get yourself to "Pancakes on the Rocks" in Hickson St at The Rocks (funny about that!). They do a similar thing which will blow your mind!
