Hello,

A friend I used to work with from Jacksonville was telling me about maple bacon (I live in Oz) and how you can't buy maple bacon over here. Recently I bought some Canadian Maple syrup from the store and I have never had maple syrup taste that good before, it is so good I even have a teaspoon or to on its own when I run out of pancakes. I have tried cooking bacon and placing small amounts or maple syrup over the bacon when served but it seems to act like a sauce more than a marinade, my friend said you have to use the oven and spread some syrup very fine over each slice to re-create the original. Has anyone tried this before?

I haven't tried that before but maple bacon is a favorite as well as pancakes with maple syrup. Yum :D

Hi Strat0Blues: my old dad goes to Canada regularly. I have him bring me back big cans of maple syrup from the source (so to speak). I love it! There ain't nothing like the Real Thing. 8)

I'm really not a fan of Maple anything. My favorite is 100% Pure Cane Syrup. Something you cant buy over the counter in this part of the Country. I order mine directly from The STEEN'S SYRUP MILL, in Abbeville, Louisiana. I like you could drink the stuff out of the bottle. It's a flavor memory from my Grandma's kitchen in Georgia. I truly love the stuff. :) :)

I believe that maple bacon is not only cured with maple syrup but with the smoke from slowly burning maple which helps impart that beautiful taste.I guess that we Canadians are spoiled when it comes to maple smoked bacon as there are so many great brands to choose from.There's nothing like a feed of maple bacon with some homemade pancakes swimming in maple syrup and real Canadian butter and a good cup of Tetley tea.

Canada, is also famous in this part of the country for what we call Canadian Bacon.The stuff is absolutely delicious, but it's more like ham than bacon. Its famous to as a pizza topping with pineapple. Hears to plenty of GOOD Food-Love-Guitars and Cars. :lol: :lol: And at least one GOOD Blues Song every day just to keep us in our place. :)

I thought maple bacon was bacon smoked with maple wood???

I just drizzle maple syrup over my bacon on Sunday mornings...just did! :D

True. There is a big stack of uncured bacon on one side of the factory and a big stack of overstocked Fender guitar necks on the other. The whistle blows to start the work shift and.... :shock:

What Americans call Canadian bacon, we Canadians refer to it as "back bacon" and I'm not entirely convinced that it's a Canadian tradition and I have no idea how it got the "Canadian" thing attached to its name. I haven't eaten back bacon since I was a child and I don't remember being all that fond of it. Plain old side bacon is what I like, lean and sliced nice and thick like 1/8" or better. My problem has always been in trying to find bacon with low sugar content. It's rare but it does exist. Most people would be shocked if they knew how much sugar was in their bacon.

Maple's okay. But rosewood bacon has a darker flavor.

Yes but maple leaves an aftertaste so it's got more sustain.
