Shrimp & chicken, plus a pinch of saffron. I steep the saffron threads in warm chicken broth first before I added to the rice, chorizo sausages, veggie mixture.

Oops, I realize that rib image I posted was pork ribs, not beef ribs. Than it just so happened that my son brought some beef ribs, and didn't know how to smoke them, so he brought over to me.

These I smoked with a indirect fire, in two rib racks, using apple chip, for two hours total. After 90min, I basted them with Stubb's Honey Pecan BBQ sauce http://www.stubbsbbq.com/honey_pecan.php, than bake in the oven at 300F for two hours.

My 25yr grandson ran into a financial bind and is staying with, he can eat! But, my son came and took most of the ribs.

And I wanted to have meals in the freezer for her so when I go back to work next week. We have one of those vacuum seal food sealers, all she has to do is pop a meal in the microwave.

Unless you were smarter than Me, and (Did Not) Let Your Food stand out to long. you can have leftover goodies from those parties yesterday. Oh well it wasn't much anyway. Today I'm making some "CHICKEN SOOP". I use Chicken Thighs bone in with skin. That way the skin and bone are easy to remove later. get out that big pot again and fill it 1/2 full of water. about 3qrt's. salt and pepper to Taste, and get it to boiling . add a hand full of garlic, 1 large Onion, Bay Leaf, Cilantro, and several celery stalks. Now add your Chicken about 6-8 nice Thighs. Boyle till the meat comes off the bone. While its doing that chop up small, 6 med. Carrots, 3 more stalks of Celery, Mushrooms, Potatoes, One more onion, and set aside. When the Chicken is free from the bone, scoop everything out but the meat Now you have a wonderful chicken stock as a foundation for your soup. Remove from direct heat and begin to simmer all your chopped vegetables in that stock. It will take about 45 min. or so for the veggies to cook. and it's time to eat. with some heavy artisan Bread. :)

My honey makes great chicken soup & pot-pies as well, she doesn't like dark chicken meat, so she uses breast meat, which to me, if boiled too long gets stringy.

But I use breast meat in my 'Chicken in Mushroom sauce', I filmed a series of cooking videos for my grandson over a year ago on making this dish:

Rice noodles, shrimp, eggs, bean sprouts, whatever veggies, and a sauce made with fish sauce, sugar & tamarind (or white vinegar). Or you use the 'Thai Kitchen' Pad Thai products http://www.thaikitchen.com/Products.aspx.

BTW, someone PM me and asked if I take pictures of all my meals, and the answer is just about them all. The reason being is that my mother was creating a cookbook for the grand daughters/sons and I had started taking pictures of meals for the book.

She passed away last year and I'm con't with the book.

I ran out of time today.Had two Dr. Appointments for the COPD and CHF so we grabbed a bite on the run. Nothing Fancy Twas a big Berger and Fry's. :) :)
