I'm sorry if I sound noobie lol :) but I recently got my Les paul setup and the techs put more string on than i do when they tuned it (e flat) and i was wondering if I tune to e flat but with less amount of string, will the tension be the same?

The amount of string on the tuning post does not affect tension. Only scale length, string gauge and the tuning you use will affect it. :D

Tuning down a half-step on a properly setup guitar should be no problem, you'll be fine.
