it's possible to request an order of a guitar or bass that's discontinued ... or create your own?

For some good cash, the Custom Shop can build you just about whatever you want. If you can afford it they build some top-notch guitars.
You also can find lots of old models for sale online at sites such as eBay, Craigslist, and a lot of retailers sell used instruments as well.
