My ES-339 is a damned versatile guitar. Cleans, crunch, fuzz, OD, higher gain, it can pretty much do it all. Add a piezo bridge (no small task!) and you can cover tons of ground. But definitely not everyone's cup of tea.

Strat-wise, I'd want something with the Clapton TBX circuit to get into 'bucker territory as necessary.

Single coils, you can dirty them up as much as you want or clean them up as much as you want. They cut through the mix, humbuckers are a little on the muddy side. But they still have their place, can you imagine an ES-335 with Tele pickups? It might be cool, but it wouldn't sound the same that's for sure. P-90s are also awesome.

i'm leaning towards humbucker, but a bridge humbucker and a neck single coil would be nice

Well for me the pick is single coil TEXAS specials, vintage p-90, as is my fav guitar is my strat for its versatility and unreal tones when pushed threw a fender blues deluxe, and my gibson melody maker with single coil p-90, single bridge pickup when pushed threw my , now don't laugh everyone!, peavey express 112 sheffield.
Both set ups are great for real, but as always it depends on the type of music you play and what your needs are for the place and space your playing in.

I don't know why I didn't come with the coil tapping humbuckers answer that 63 Supro did especially when I had my Epi Les Paul Traditional Pro with exactly the same features sitting 5' away from me,it must be another sign of the brain shutting down from old age.
