I'll usually play Blues Deluxe by Bonamassa or Five Long Years by Buddy Guy and just run some blues scales from there...

You might be onto something here. So this is the plan, when trying a guitar play whatever, strum pick, finger pick, chickin pick and as soon as one of 'em pesky sales people approach, quickly switch to "Stairway to Heaven" but with a LOT OF DISTORTION.

Ha, where did those mom and pap shops disappear?

Stairway on the Water,seriously though Spanish Castle Magic,it's a song that really brings out the quack when trying a Strat and maybe throw in some Little Wing or Angel,I know how they should sound on a Strat so if I hear the tone I want I bring the guitar home. If I'm trying out a humbucker equipped guitar I'll try something like La Grange or Rebel Rebel.

A song I wrote called "Let Me In"

It has a cool Texas blues-rock-Ventures surf opening lick, and it goes all up and down the fretboard, so it tells me if the guitar is intonated right.

+1 I do the same thing - electric or acoustic, I love playing that song. If it feels good playing it, it's hard to put down the guitar.
