Glenn Kaiser does both electric & acoustic stuff, and I love both--his mostly acoustics albums with Darrell Mansfield-Trimmed & Burnin and Slow Burn are excellent Delta/Country/acoustic blues type stuff.
You can get them together as a double CD now.

Also Neil Young--a vastly under-rated acoustic guitarist.

There are 2 great British acoustic guitarists that I forgot to mention,one in particular our friends from over the pond are no doubt familiar with and that's Bert Jansch-a master acoustic picker and the greatest influence of Donovan.The other one perhaps not as well known but a brilliant classical/rock/jazz guitarist and that's Howard Werth of Audience. Werth's compositions and playing on Audience's House On The Hill and Lunch are simply sublime and still remain fresh when listened to today even though these albums date from the early to mid 70's.

Doyal Dykes, Tommy Emanuel, Tony Rice, Dan Tamynski and the Steeldrivers are tops on my list. Other groups are IIIrd Tyme Out, Allison Krauss and Union Station, Mountain Heart, Larry Sparks, Balsam Range. All of them are amazing musicians.

Mumford & Sons, most definetly. Dispatch, maybe. Jack Johnson, most def. John Mayer's acoustic stuff is good, too (sorry, but it's true).

I dunno... When bands do acoustic things, it so often sounds wonderful. Not to say it sounds better, but it's a great break from their electric set.

So my favorite non-acoustic bands that have turned acoustic every once in a while have to be...

Fall Out Boy, Paramore, The Red Jumpsuit Apparatus, Emery, All Time Low...

I know these acts are huge and modern, and realize that maybe many of you don't like them so much. But that's ok. :D

Andy Mckee rocks pretty hard. Also, Jim West (the guitar player in Weird Al Yankovic's band) is a pretty decent slack key player.
