There as been so many through the years and one of the early ones, early/mid 60's was extraordinary for it's time. Unique, mind blowing and I gotta say 'still is'
Shapes Of Things - Yardbirds
Might have been Jeff Beck, I can't actually remember just at the moment but anyway, it still hits the spot when I hear it. :)

One solo I think first defined rock in the 70s was the lead for Chicago's 25 or 6 to 4.
Also Elliot Easton's lead on Tonight She Comes.

But there are a whole bunch more.

Solos that were influential for me at the time.

Sunshine of your love
Black Dog (more the intro)
Whole lotta love
Stairway (when it was cool)
One (pretty much the entire song)
Any Hendrix or SRV

I like to think that the guitar solo has evolved. Days of the guitar playing power chords in the background for a while then the guitar player doing fretboard gymnastics for a few minutes then back to power chords are over for the most part. This is why I love Hendrix the whole song was a solo. In a way he was far ahead of the game. Solos are now entwined into every part of the song in my mind.

Of course these change weekly

+1 for both of those Joe Bonamassa tunes. I think I like the solo in Blues Deluxe a little better, and it's overall a better guitar song IMO.

it'd be easier to choose the solo's not to list.

my old guitar player Rob had the coolest sounding Tele, great chunk and cleaned up very well, an understated solo starting at 1:20, this is me 3:15 and Frankie at 3:25. For those who have been on the Forum awhile, this is probably the 100th time you've seen this oldie

Now guys, check this one out before you laugh: the bluesy solo at the end of Chris Ledoux's "This Cowboy's Hat" (either Mark Sissel, Chris Leuzinger or Brent Rowan).

Eagles "Hotel California" (Don Felder & Joe Walsh)
David Bowie "China Girl" (SRV)
Fleetwood Mac "As long as you follow" (Billy Burnette or Rick Vito)
Genesis "Firth of Fifth" (Steve Hackett)
Marillion "Sugar Mice" (Steve Rothery)
Anything by David Gilmour or Brent Mason
Michael Jackson "Beat It" (EVH)
Eros Ramzzotti "L'Ultima Rivoluzione" (Steve Farris)
Abba "Our Last Summer", "Eagle" (Lasse Wellander & Janne Schaffer respectively)
Jean-Jacques Goldman "Je te donne" (2nd solo - Michael Jones)

There are thousands of good solos; but it I think one solo is such, it should be played in my funerals:
Jimis "I don´t live today" as a live version
It is no more music, it is something else...

One guitarist haven´t mentioned here: Frank Zappa. For example his playing in LP Hot Rats is very good.
