Funny. Just had the old Fish'n'Chips and while waiting for it saw this on the telly. Sky News was virtually going nuts about it! I was wondering how many nuts you could produce with such a big set of antlers... I'm sure there is some kind of formula? 8)

Whatever we think about that those nobby hunters are not having it all their own way. Only a couple of days ago a helicopter full of Prince Charles' hunting buddies was brought down... by a single shot from a red deer. They're fighting back!

BTW: regarding nut material. My cow rustling days may be coming to an end. I have all kinds of plans regarding exotic nut materials - but we'll get to that... later. Be sure, you'll be the first to know. :wink:

Oh, last thing. Just been down in Devon for the weekend. One of our local farms supplies venison at almost the same price as beef. Just enjoyed the first venison stew of the autumn - yummy!

yep, it is a quite common thing to eat in the wild parts of Germany. If you like the taste it's good. Especially this time of year is good for venison. They make a mighty roast or stew, with lots of mushrooms and a nice sauce or gravy, big Knoedel and Rotkraut or Sauerkraut... Matched with a decent beer it'll bring you safely through the winter.

Off goes Ceri on another round of teasing his fellow forum members with stories of the exotic materials of his nuts. Quite eyebrow-raised I sit and think: What is he up to? :lol:

So shall we have a page full of stew recipes now?

I like to cut large onions into eighths, so you end up with nice big chunks on your plate. If I can be bothered I coat the venison pieces in seasoned flour, cos they seem to brown more nicely that way. Then, some stock, some Lea & Perrins, some HP Sauce, maybe some chilli sauce, a bucket of juniper berries, soy sauce, plenty of herbs and pepper and lots of red wine for the liquid. Or beer is good. Or Guinness is excellent.

And interestingly a Danish liqueur called Gammel Dansk also makes a fine sauce for strong meat. If you visit Denmark people always give you a bottle of their national drink, almost certainly because they in turn were given it and have no fecking idea what to do with it. You certainly wouldn't want to drink it: it's disgusting. Like having a glass full of neat Angostura Bitters (which also makes a good stew additive, by the way), only worse.

And yet: very good in stews. Go figure. Not so good you need to buy it specially - but if you were ever stupid enough to pick up a bottle at the duty free shop leaving Denmark... well, now you know.

Anyhow. Cook the stew very slowly for many hours, then serve with a mountain of creamy, peppery mashed potatoes and some fresh garden peas with mint. Aaaahhh...

Foolishly I didn't take a photo of our venison stew - Lord knows why because it was obvious I'd need to post it on the Fender guitars Forum. We like pics so here's that Danish liqueur instead:

Umm. Sudden appetite arises. Well done, Ceri! :lol:

Though in my German vocab "Gammel" is equivalent to the English "trammelled", and a year or so ago there was a big scandal throughout the country about so-called "Gammelfleisch" (bad meat used primarily in Kebab and cheap burger pads etc), as always, German society was outraged, and prices for meat in general went down quite a bit. Since I am of the opinion my gastric juices should work for their bread and cheese (hah!) I paid the scandal no heed and munched happily on. Also I don't understand the avarage consumer: He wants to pay less than 1,- € for a kilo's meat but naturally is exasperated when finding out it's not good for his health. Hah.
But anyway, pouring a bottle of Gammel into my stew is something I'd probably not do. ;-)

Ceri mate, sounds like a great recipe! When do we start that restaurant - you know, the one with the guitars on the wall and good food and occasional live performances?

Juniper berries do the trick, that's right! Have you tried adding some bay leafs? also add some mustard seed and some diced carrots. Do a wonderful trick those. You can also add some raisins if you want (they go good if you're deglazing with heavy red wine).
If you can take it (few men can), start cooking the day before you eat, give the pot a slow simmer for six hours, then let it rest (cool off) for the night and slowly re-heat during the next day over an hour or more. THEN eat. I rarely manage that, it's usually too tempting to bear.

If you're not making stew but a roast of wild boar, have you tried either an oven bag or clay baker? both work wonders (remember to soak the clay pot in water for some hours before you put it in the oven).

Mate, now I'm feeling positively famished, and I'm stuck in a one-room flat with a bloomin' microwave. Distressed ripples cross my brow.

Anyhow. Better concentrate on some work. I'll change my guitar strings. Maybe that wil stop my waterbrash. 8)
