Why all the negativity concerning signature models? I think somebody's suffering from CD-disorder. (Chronic Disatisfaction)
My choice anyway is Pete Townshend's current Fishman-equipped Strat. I'd pawn my liver for one!

Robin Trower. Bridge of Sighs is a real nice piece of work - Blues Rock, plenty of melody in the ballads, hold the metal.

Even though I prefer Teles, I would really like to see a trio of Iron Maiden signature Strats for Dave Murray, Adrian Smith, and Jannick Gers.

I would say Thurston Moore from Sonic Youth, but making a Jaguar model dedicated to him would be contradictory to his idea of individual music-making.

Maybe a Mauro Pawlowski Tele?

I think Dave Murray from Iron Maiden and David Gilmour from Pink Floyd should have their own.

How about a Brad Traweek TC-90. They both deserve a little appreciation.
