Okay, I feel like a total idiot by asking this. I took the pickguard off of my guitar because I wanted to, you know, see what makes it tick, and there are six springs that I don't know where they go. I'm thinking they go under the screws for the pickups, but I'm not sure. I didn't take the strings off, because I heard that can loosen up the bridge. It would be so much easier to put the springs back with the strings off. What I'm asking is where do the springs go, and is it safe to take all of my strings off?

Of course it is safe. Having a string-less guitar for long periods can do funny things to the neck but for things like that it'll be fine.

Secondly I believe the springs do go on the PU screws, under the pickup.

I take all the strings off my guitars every time I do a string change . So that is safe.

The 6 springs go between the pickguard and the pickups on the adjustment screws for the pickups.

I'll find it easier to change strings one at the time.
But it won't hurt the guitar if you take them all off to
clean the fingerboard or have your frets dressed etc.

Taking all the strings off for long storage periods is mostly an acoustic guitar issue, moreso on newer guitars. The "pull" of strings on the bridge of a steel-string is roughly 165#. The pull on a nylon-stringed guitar is about half that. The thin tops of fine acoustic guitars and the under-the-top bracing are carefully designed to counter-act that pull, while maximizing the tonal properties the vibrating strings impart. As time goes by, fluctuations in humidity and temperature will affect the properties of the wood and strange "warps" may develop on the instrument stored without strings. Lesser seasoned wood is affected most. Solid tops are more affected than laminated. Changing one string at a time places less stress on the design system, which in very high quality instruments is always desireable. On very high-end instruments, even miniscule finish cracks diminsh the value of the instrument considerably.
