Just about any cover done by the best cover band of 'em all... Govt. Mule.

They play so many outstanding originals, but these guys are masters at putting new life into other bands songs.

Whiskey In the Jar is actually an Irish folk song thats hundreds of years old. Metallica's version is horrible IMO.
