Hi BN: good thread!

We get very good quality local venison (by local I mean reared and butchered two miles away). I like to get some nice thick tender venison steaks and cook them very hot and fast, three minutes on each side, and then rest for a minimum of 15 minutes (the key bit).

Meanwhile I put together a port wine reduction with glace de viande made earlier from veal bones from the same farm/butcher. Add some nicely al dente steamed seasonal vegetables - and the evening is mine!

Homemade bayleaf icecream to finish (strange but true: try it...).

I just had some pretty invasive dental work done and am on a diet of painkillers and soft food for the next few days. Ceri your killin' me. I love venison and cook it very much the same way you do.
And the Bay leaf ice cream sounds really good.

It sounds really weird but I promise it's great. Subtle. (Fresh bay, obviously. Dried just wouldn't do...)

Few years ago I was having one of those "gotta do something different" phases and tried a row of strange ice cream recipes. Chilli ice cream, lavander ice cream, etc etc. Can't for the life of me remember where the bayleaf recipe came from - but it's the one that stayed.

Very easy, too. And good for that soft-food-only diet... :D

I love our Christmas dinner. My daughter makes a special glaze (her secret recipe) and does a large maple cured spiral cut ham with pineapple rings all around the outside. With that we have sweet potatoes, and two kinds of squash (butternut and acorn, very similar), regular whipped potatoes, gravy, a roasted turkey breast with a pan of stuffing, and three kinds of pie for dessert (pumpkin, pecan, and lemon meringue). Of course, a nice big glass of milk and maybe a glass of non-alcohol celebratory beverage. :lol: :lol: :lol:

omakase sushi meal at my favorite sushi restaurant

Wow! From the sounds of it ... well worth the heart attack I'd have from eating like that! Good thing it isn't breakfast time here in LA.

Reminds me of band days. Growing up in a small upstate NY city, there wasn't much open by the time you'd finish a gig in most bars. But one place was Uncle Henry's Pancake House -- one of maybe three late night spots within a 50 mile radius. They had the greatest chocolate chip pancakes (big too) and not overdone bacon. That was my post-gig thing on many a Friday and Saturday night.

Terrific "show" (in the "they only come out at night" sense) too for while you were eating.

Get ready for the most tastiest site of your life (And no, what makes you say that it gives you a heart attack??)

Breakfast ...

Give me some steak and eggs over easy with home-fries loaded with jalapenos and some hot sauce on the eggs. Rye toast well done and lightly buttered. Large O.J. and a nice cup of Kona Coffee.

Dinner ...
Spicy Tuna Roll sushi with wasabi and soy sauce. Filet Mignon (rare) and shrimp hibachi style with rice, noodles and veggies.

Maybe a cocktail ... yeah a zombie sounds good.

Dessert is a couple of scoops of Breyer's All Natural chocolate

I have cooked almost every type of food. I have also cooked for quite a few famous people.
I am classically trained and love to cook for my friends. I get them to try some things they didn't know they would like.
I love sushi uni, tuna, etc...and will try ANY food at least once.

Out of all the exotic foods I cook, An extra cheese and peperoni pizza with diet Pepsi and Reese's cups for desert is my favorite.

A nice 8 to 10 oz Sirloin, very rare - 3 eggs over easy and some good home fries and a couple of slices of rye toast - OJ, large glass of milk, several cups of some really good strong coffee.

Any time of the day is good for me :shock: :P

Of course if it has to be a more formal meal - then a Leg of Lamb, mashed potatoes, baby peas with pearl onions - lots of butter for the last two.

Is that good enough ?
