I can cook a sweet venison sirloin, you would think (texturally ) it was beef.
I have had and served Buffalo (Bison) strip steak, NEVER cooked over Medium. Fantastic stuff.
I have had quail, wild turkey, goat, partridge, goose, Squab (pigeon), and all kinds of weird seafood.

I've eaten dog when I was a kid back in China, but I didn't mind cause well, I was a kid, I didn't know squat.

but I'd love to try those "exotic" meats someday too.
