On Feb 02 2016 Wiarton Willie failed to see Phil's shadow Tuesday morning, meaning spring is right around the corner, or so the folklore says. Wiarton Willie thinks Phil would make. a great Top Hat.

Tip: In the 80s I was fortunate enough to get a tour of the sugar bush near Trois Rivieres, Quebec where I was introduced to a pitcher of Light Maple Syrup. I am a convert and you can eat more pancakes/flapjacks without a syrup overdose since it is the early less sweet run of syrup before more processing of leftover syrup. Some dark version is labeled as Light but the better is light beer colour IMHO. If you can get it you may, like me, never look back. Enjoy!

As a matter of fact I am sapping and boiling my back yard Maples now so I should have about a gallon in a week or three I only tap 4 to 5 trees a season I just don't have the time to tap my acre of maples
