I've been trying to find on the Fender website details on the output of various pickups but can't find anything. Can someone point me in the right direction?

There is no compendium, per se. You'd probably have to go to Harmony Central's Pickup Review section or a similar type site and look up the models you're interested in, recording whatever data the individual reviewers chose to post. Take some of it with a 'grain of salt' though.
