Very interesting, huntning pheasants with a rimfire .22 cal. Its a good choice but quite against the regulations here. Shotguns only for birds. Also curious that no license is required (for hunting pheasants and rabbits I assume or owning small caliber arms?).


Hi Jay, welcome back.

I know nothing about guns, but at the rural end of my regular travels several of my neighbors (and all the farmers) have shotguns which, as you say, are the normal tool for bird shooting, far as I'm aware.

People can have other stuff too, if they can show a genuine need. There's a farm a mile up the road where they run deer and the local butcher comes up and shoots those in the field with a savage looking rifle with a scope - couldn't begin to tell you what it is. He butchers and hangs it in his farm shop a few hundred yards away, from where it then travels to our fridge and into our tummies.

So for anyone who thinks about that stuff, that's organically reared venison with exactly two food miles on it. How eco right on is that?

Haven't got round to smoking venison yet, but it's on the list...

Hot damn, this is making my mouth water!

So far we've produced amazingly moist chicken and pheasant in the smoker by using the water bath, just as you say. The idea of smoking as a way of preserving food is completely wasted on us because it all gets scoffed the minute it comes out the smoker!

We did some salmon for the first time recently too, and it worked amazingly well. In fact, there's a picture of it on Gratz's sandwich thread...

Dunno how, but we haven't made a mistake with this smoking thing yet. Which is in very large part thanks to the excellent advice we've had from several Forum users, particularly yourself, Jay.

(Big Jay generously gave me some very in depth smoking advice off the Forum, in addition to what's been seen here.)

Not sure when the venison season begins in my neck of the woods (maybe it's going already?), but red meat is probably next on our list for smoking experiments. Cider in the pan and sauce made from the drippings, huh? Noted!!! :D

I've been about - but had some issues with my Mac - yes, even Macs have issues sometimes - especially with long in the tooth hard drives :lol:

And as I like to say - Life Interrupted - that's how it goes.
