OK. So I made some bread - stoneground wholemeal with roughly ground cumin and coriander seeds in it, and the appropriate decoration in flour on top:

Next, I had to somewhat redesign my earlier sandwich idea, because we don't have any smoked chicken to hand. But the other day we did try our hand at smoking honeyed salmon for the first time, over applewood and with some fresh sprigs of bay in the water bath. Turned out pretty good!

So here's my sandwich: home smoked salmon, on a goodly bed of chutney, with tomatoes and spring onions (scallions) from the garden; also some sundried tomatoes, pickled gherkins and a helping of hot chilli jelly over the top, between slices of the aforementioned homemade bread. Season to taste. All washed down with a bottle of Fuller's Honey Dew beer.

Different than what I'd intended, but I'm still going to call it:

The Smokey Player Sandwich.

Hop, if two or three years ago you'd told me I'd be smoking fish, baking bread with guitars on the top, building sandwiches and taking photos of them... and then posting those pics on a website about guitars...

SALMON!!! EVEN BETTER!! Sorry for shouting but being a west coast person, salmon is my all time fave. I'm going to barbecue some sockeye tonight, (with a little alder smoke). That sandwich looks fantastic! Sign me up.

The Zontar would be cubed chicken & beef mixed in barbeque sauce & mayo with oregano, cumin, rosemary & basil and some lettuce on top.

It would come in your choice of a wrap, a pita, or a bun.

With some pickled beets on the side.

I'd assumed my sandwich would be too low on cholesterol for most folks - but I'm wondering whether Gridlok has had the same conversation with his doctor that I have had? :(

Gotta find ways of making "healthy" still have some fun in it...
