Did ya know London Broil is totally North American and not British? I wonder if it’s served as such in London. Friends served us a great hunk of sliced London Broil on our trip to the coast. Gotta love it.

We pretty much season steak the same as you, Paul. Well, almost except we do top it with butter, although that margarine of yours was a staple for years for someone who once lived on a dairy farm. :lol: That doesn’t mean we don’t trick out beef in other ways, but our beef tenderloin (when we have it) is usually simple as mentioned with perhaps a touch of red wine and butter sauté. The flank gets the fajita treatment, while others get teriyaki or, perhaps, bbq. Still others get a simple Salish smoked alderwood sea salt sprinkle. It’s west coast indigenous tradition for fish and great for beef too; but, it is strong in that only a pinch is necessary which is fine because it’s hard to get.

I’ll use a gas grill, but charcoal when it’s cold or windy outside because it works better in this case. At times I’ll use both. In the house it’s sear the steaks on all sides in a pan just to keep the juices in, toss ‘em in an oven to cook, flipping them halfway, and maybe finish under the broiler for the last minute, and then do the butter dab.

Made battered fish burgers yesterday and for the first time I kicked things up making the filets with melted Swiss cheese in the oven, then with the fish on a plate I topped that with a little onion and bacon fried hash browns mixed in butter, a little sea salt, and a dab of ketchup. This sat over a the bottom of a burger bun already spread with a mixture of sliced red onions tossed in coleslaw dressing, some cream cheese, a touch of horse radish, lemon juice, and a sprinkle of sugar to reduce the sour lemon and strength of the onions, and finished with a sesame burger bun top (bun tops and bottoms were butter (optional) toasted in a pan like a cinnamon bun to keep them crisp). Fish and fried potatoes all in one. :P
Having morning coffee, cinnamon toast and some home made blueberry jam that I received for Christmas and, though I prescribe to just cinnamon toast and butter, the blueberry combo works nicely. :D

Had an upset stomach yesterday and thought I might be catching the flu, Made it through the night, and I feel better, Prolly, too much holiday goodies including gifted west coast chocolate shop nummies delivered by the postman yesterday. :P Now I just finished some oatmeal to settle the tummy even more, and I’m having my morning coffee.

Gonna downsize my nostalgic 78 rpm collection by recording it. There’s so much music that has yet to go digital, and maybe it will never make the transition. Not all of the recordings are worthy, and yet many are definitely a missed opportunity, IMHO Guess I’ll have to do my part for posterity.

Kudos to you FSB, at least you're making an attempt to preserve some history.

These days we may "scoff" at older recordings, because they don't meet the same "fidelity" of newer recordings, but it doesn't mean the music isn't deserving of preservation.

Even most of the Beatles recordings were only 4-track masters, and look how good they turned out.

Tons more of 78 RPM that were only recorded in mono. Benny Goodman at Carnegie Hall from the 30's is one of my favorites. A lot of great musicians that were involved in that.

Doing some laundry, and checking email. Probably will jam on the bass later, I'm not sure yet. That, or go for a walk. It depends on what the weather is going to be like. I also need to spray that oil on my new boots to water proof them at some point, before I need to wear them. I'm debating whether I should do that outside on the back deck, or in the basement on a workbench. Probably the basement, since we've been getting a lot of rain, and/or I don't know if it's a good idea to leave them outside overnight, or however long it takes for that to dry. If I were up in the morning, that would be more feasible.

Isn't there a way to clean up old recordings? I've heard some very old digitally remastered songs that sound really good. It may be something that requires some high-end equipment that's not practical for home use. I have a plugin called vinyl that makes new recordings sound like vinyl, sort of, but we want to go the other way.
