I made an omelette with Spam and Swiss cheese for breakfast. I was kind of flying by the seat of my pants, because I haven't made one in at least 5 years, and I wasn't sure how it was going to come out. Luckily, it came out pretty good.

All of that sounds great to me. I prefer waffles over pancakes and omlettes are yummy. I haven't done the spam with omlettes, but it sounds good. When I make omelettes I sometimes separate the egg whites and yolks. Then I whip the egg whites by hand to add volume till it's frothy (sometimes adding salt, pepper, and maybe spices). Then I fold in the yolks. Add it to a lightly buttered or non stick heated pan, and it puffs up so mushrooms and cheese or whatever (maybe red and green diced peppers or in this case you might add spam) can be added to one half/side when it's about to set, then fold over to a half moon shape to finish. If you like, cut it crosswise in half to divide for two or keep it for one.
Pancakes are a regular here. My usual is a pancake topped with a slice of bacon, then a basted egg, then real maple syrup, and repeat until you have a stack. Tha's how the guys in the backwoods did it and it's called a logger's special (amongst other versions and names).

Anyway you have spam, bacon, sausages, eggs, omelettes, pancakes, waffles it's all good IMHO. A side order of hasbrowns with a little onion finishes it off for me.

Paul and Glenn, you two always make me hungry with your great nummies, munchies, and suckies, so I guess I'll go to the freezer for the waffles I bought yesterday. Fresh are better for sure, but I'm lazy today.
